This manual should be useful to anyone interested in developing root crops to generate income and increase supplies of human and animal food. The manual is divided into two parts. Part I, consisting of seven units, presents an approach to product development and explains how to apply it. Part II presents summaries of 10 case studies on product development projects in various countries. In addition, we draw on the experience of these projects throughout the book to illustrate particular points aobu the development of root crop products and processes.
