Recipe Instructions:
- Put oyster plants into boiling tomatoes and peppercorns.
- Stir well to cover all surfaces with acid from tomatoes; cover utensil and steam until tender or about 10 to 15 minutes.
- Add salt and cayenne. Taste for seasonings and serve.
- VARIATIONS: add chopped onion, celery and /or ripe pepper or pimento to the tomatoes.
- Just before serving stir in 2 tablespoons ground parsley or ½ cup cubed or grated nippy cheese; cover utensil until cheese melts.
