lb breadfruit (approximately 3 cups) peeled and cubed

cup onion chopped

lb fresh spinach or 10 oz. package frozen, drained and chopped  

 

  salt & pepper

cup fresh lime juice

  eggs beaten

cup sour cream

Recipe Instructions:

  1.  Sauté breadfruit and onion in olive oil and butter until onion is brown on edges.
  2. Reduce heat, add fresh spinach and cover saucepan to wilt spinach.
  3. Combine lime juice, eggs, sour cream.
  4. Pour over spinach/breadfruit mixture.
  5. Remove from heat.
  6. Stir in 1 cup Swiss cheese.
  7. Top with remainder of Swiss cheese.
  8. Bake at 350⁰ for 45-50 minutes.
