Recipe Instructions:

  1. Brown onion in a large heavy saucepan with 1 to 2 tablespoons of oil
  2. Add and brown tomatoes
  3. Cook 10 minutes over high heat, stirring occasionally
  4. Add: Pumpkin, okra, carrots, tomato paste and water
  5. Continue to cook on high
  6. Add: potato, pepper, salt, cumin garlic, cilantro and water
  7. Simmer until vegetables are tender
  8. Meat of choice may be added and cooked with the vegetables
  9. Serve over rice.
