Teff Varietà
(Eragrostis tef)
Teff is an annual tufted grass, growing to 1 m in height, with very small grains that may be ground into flour or eaten as a porridge. Teff is grown as a cereal crop primarily in Ethiopia. The grain is ground into flour, fermented and made into Injera, a sourdough-type flat bread.
Brown/Red
This teff variety has seeds that are brownish red. It is a hardy and fast maturing variety, maturing in about 4 months. Historically, it has grown better in south Florida, USA than the 'White' variety.
White
This is the most common variety on the market in Ethiopia. It is grown at high elevations and under dry conditions.
