Recipe Instructions:

  1. Using 6 cups of water boil Potatoes for 20 minutes and then mash.
  2. Using 3 cups of water cook amaranth grain and then drain well.
  3. Add sour cream or yogurt, salt, sugar, margarine and pepper.
  4. Mix well and add milk to make good consistency.
  5. Beat until fluffy.
  6. Add chopped chives or green onions and amaranth.
  7. Place in greased casserole, top with cheese.
